There is one thing\nI promise you about this recipe; all the &#8220;meat eating \u201cmen in your life will\nbe in love with all the &#8220;porky goodness&#8221; of this chili.&nbsp; They\u2019ll come back for more.<\/p>\n\n\n\n<p>This stew is a mash-up of America&#8217;s Test Kitchen recipe for White Bean Chicken Chili and Rick Bayless&#8217; 4 lb. pork stew meat<br>&#8211; 1.5 lb. ground pork sirloin<br>&#8211; 7 slices bacon<\/p>\n\n\n\n<p>-Ham\nstock (this is found in a concentrate form called Better Than Bouillon)<\/p>\n\n\n\n<p>&#8211; 5 poblano chilis<br>&#8211; 5 anaheim chilis<br>&#8211; 4 jalapeno (1 reserved)<br>&#8211; 7 or 8 tomatillos<br>&#8211; 2 large onions<br>&#8211; 3 stalks celery<br>&#8211; 1 carrot<br>&#8211; 5 heads roasted garlic<br>&#8211; 1 bunch cilantro (1\/2 reserved)<\/p>\n\n\n\n<p>Green\nonions\/scallions for garnish<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"544\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2010\/11\/pork-bacon-boise-food-photographer.jpg\" alt=\"pork loin and bacon\" class=\"wp-image-6062\" srcset=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2010\/11\/pork-bacon-boise-food-photographer.jpg 800w, http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2010\/11\/pork-bacon-boise-food-photographer-300x204.jpg 300w, http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2010\/11\/pork-bacon-boise-food-photographer-768x522.jpg 768w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<h4 class=\"wp-block-heading\">Directions<\/h4>\n\n\n\n<p>&#8211; <strong>Brown meat<\/strong>\nin small batches and set aside.<\/p>\n\n\n\n<p>&#8211;<strong>While browning\nstew meat and ground pork, cook the bacon<\/strong>&#8230; We use a broiler pan on low heat (about 280) so the fat\nrenders and drains away as much as possible.&nbsp; When the bacon is very\ncrisp, put it off to the side.<\/p>\n\n\n\n<p>&#8211;<strong>Roast the garlic<\/strong>\nat the same time as the bacon&#8230; When it is soft, squish it out of the cloves\nand put it in a bowl.<\/p>\n\n\n\n<p>&#8211; While the meat is browning, <strong>rough chop chilies, tomatillos, onion, celery and carrot.<\/strong><\/p>\n\n\n\n<p><strong>Remember to seed and de vein the chilies<\/strong>, that is where the heat can get to be too much.\u00a0<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"544\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/chopped-onions-idaho-food-photographer.jpg\" alt=\"chopped vegetable\" class=\"wp-image-6066\" srcset=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/chopped-onions-idaho-food-photographer.jpg 800w, http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/chopped-onions-idaho-food-photographer-300x204.jpg 300w, http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/chopped-onions-idaho-food-photographer-768x522.jpg 768w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<p style=\"text-align:center\">A feast for any guys eyes&#8230;..pork, and\nlots of it.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"544\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/cooked-pork.jpg\" alt=\"browned meat in bowl\" class=\"wp-image-6067\" srcset=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/cooked-pork.jpg 800w, http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/cooked-pork-300x204.jpg 300w, http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/cooked-pork-768x522.jpg 768w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<p>&#8211;<strong>Saute all your chiles and veggies until browned<\/strong>.\u00a0 Season with salt and fresh pepper as you go, it really does make a difference.<\/p>\n\n\n\n<p>Once complete, <strong>deglaze the pan with a bit of ham stock<\/strong> and place the veggies into the blender pitcher.\u00a0 Do not blend yet.<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" decoding=\"async\" width=\"800\" height=\"544\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/chilis-cooking-in-skillet.jpg\" alt=\"anaheim chili cooking in skillet\" class=\"wp-image-6068\" srcset=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/chilis-cooking-in-skillet.jpg 800w, http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/chilis-cooking-in-skillet-300x204.jpg 300w, http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2019\/03\/chilis-cooking-in-skillet-768x522.jpg 768w\" sizes=\"auto, (max-width: 800px) 100vw, 800px\" \/><\/figure>\n\n\n\n<p>Add the browned stew meat to just enough ham stock, the level of liquid should not quite\ncover all the pork.&nbsp;
