{"id":179,"date":"2012-07-18T17:25:00","date_gmt":"2012-07-18T17:25:00","guid":{"rendered":"http:\/\/leapphotography.com\/blog\/cherry-jam-boise-photographer-food-lover\/"},"modified":"2016-07-26T22:34:49","modified_gmt":"2016-07-26T22:34:49","slug":"cherry-jam-boise-photographer-food-lover","status":"publish","type":"post","link":"http:\/\/leapphotography.com\/blog\/2012\/07\/cherry-jam-boise-photographer-food-lover\/","title":{"rendered":"Cherry Jam:  Home Canning | Boise Food Photographer"},"content":{"rendered":"<div style=\"text-align: center;\">Last Christmas my father-in-law gave me a cook book called <a style=\"color: #38761d;\" href=\"http:\/\/shop.bluechairfruit.com\/products\/the-blue-chair-jam-cookbook\">&#8220;The Blue Chair Jam cookbook&#8221;.\u00a0 <\/a>Honestly I don&#8217;t know if I love any cookbook more than this one.\u00a0 The gal who wrote this is like the <a style=\"color: #38761d;\" href=\"http:\/\/www.americastestkitchen.com\/\">&#8220;America&#8217;s Test Kitchen&#8221;<\/a> of Jam making.\u00a0 I do love America&#8217;s Test Kitchen so this statement really speaks volumes.<\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">This cookbook goes over all the scientific ins and outs of why things are done plus she divides the book&#8217;s recipes into seasons.\u00a0 In my opinion this is the best thing about the book. Up until owning this book, I had never even attempted making jelly, jam or marmalade.\u00a0 I certainly had never even imagined trying to make jam in January\/February but this year I made 3 different batches of marmalade.<\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">Another thing I find absolutely wonderful about this cookbook is that pectin is never incorporated in the recipe.\u00a0 She goes over all the details on a fruit by fruit recipe on how to prepare the jam or marmalade so no commercial pectin needs to be added.\u00a0 You use the natural pectins already found in the fruit&#8230; The fruit flavors shine!<\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">My hope is that this post will inspire you to get out, find some fresh fruit and make some jam.<\/div>\n<p>&nbsp;<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1001_IMG_27161.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1001_IMG_2716.jpg\" width=\"435\" height=\"640\" border=\"0\" \/><\/a><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\">We are fortunate enough to have friends who just bought a house with a pie cherry tree in the backyard. The &#8220;Beer Guy&#8221; at the <a href=\"http:\/\/www.boisecoop.com\/\"><span style=\"color: red;\"><span style=\"color: #38761d;\">Boise Community Food Coop<\/span><\/span><\/a> and my husband spend way too much time together.\u00a0 \ud83d\ude42 They want to brew a &#8220;sour cherry beer&#8221;, but that isn&#8217;t happening this year. All of the cherries I used in my jam were picked from Matt and Arwen&#8217;s tree. It is easy to scale it up.<\/b>)<\/i><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1003_IMG_26421.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1003_IMG_2642.jpg\" width=\"640\" height=\"434\" border=\"0\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><b><span style=\"font-size: large;\"><i>Place 5 spoons in freezer before starting this process.\u00a0 The reason why is explained later in the post.<\/i><\/span><\/b><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><b><span style=\"font-size: large;\">Step 1:<\/span><\/b><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Wash Cherries <\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1004_IMG_26241.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1004_IMG_2624.jpg\" width=\"640\" height=\"434\" border=\"0\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><b><span style=\"font-size: large;\">Step 2:<\/span><\/b><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Remove pits from cherries.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\"><span style=\"font-size: small;\">I placed the pitted cherries in the bowl with &#8220;Fruit Fresh&#8221; to keep the color bright.\u00a0 I found this especially helpful on my second batch of cherry jam.\u00a0 I pitted the cherries the night before to save myself some time the following day.<\/span><\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">\u00a0<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\"><span style=\"font-size: small;\"><i>We now have 2 <a href=\"http:\/\/www.oxo.com\/p-466-cherry-olive-pitter.aspx\"><span style=\"color: #38761d;\">OXO cherry pitters<\/span>.<\/a>\u00a0 8 pounds of little sour cherries was a bunch to pit.\u00a0 My husband ran out and bought another just to help me.\u00a0 <\/i><\/span><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1005_IMG_26281.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1005_IMG_2628.jpg\" width=\"434\" height=\"640\" border=\"0\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: center;\"><b><span style=\"font-size: large;\">Step 3:<\/span><\/b><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Remove the tiny almond like kernel from the center of the cherry pit.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">So tedious, but so worth the effort! <\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">\u00a0<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\"><i><span style=\"font-size: small;\">My husband came to the rescue once again.\u00a0 He got out a hammer and gently tapped the pits (between a towel) until they cracked open.\u00a0 Gathering enough kernels for me to use. You should have about 3 tbsp of them. Eat one, they taste just like amaretto\/marachino!<\/span><\/i><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1006_IMG_26341.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1006_IMG_2634.jpg\" width=\"640\" height=\"434\" border=\"0\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: center;\"><b><span style=\"font-size: large;\">Step 4:<\/span><\/b><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Squeeze lemons<\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1007_IMG_26551.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1007_IMG_2655.jpg\" width=\"434\" height=\"640\" border=\"0\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: center;\"><b><span style=\"font-size: large;\">Step 5:<\/span><\/b><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">In bowl combine the following:<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">\u00a0<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">3 pounds cherries<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">1 3\/4 pounds sugar<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">5 3\/4 ounces lemon juice<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">3 to 4 tablespoons maraschino liqueur<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">\u00a0<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Mix together and set aside<\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1008_IMG_26521.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1008_IMG_2652.jpg\" width=\"640\" height=\"434\" border=\"0\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: center;\"><b><span style=\"font-size: large;\">Step 6:<\/span><\/b><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">In a non reactive pot place the following:<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">\u00a0<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">1 pound cherries<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">7 ounces sugar<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">2 ounces water<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">\u00a0<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Cook over low heat, stirring constantly.\u00a0 Gradually inching up the heat to medium, until the mixture boils.\u00a0 <\/span><\/div>\n<p>&nbsp;<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1009_IMG_26451.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1009_IMG_2645.jpg\" width=\"640\" height=\"434\" border=\"0\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<div style=\"clear: both; text-align: center;\"><span style=\"font-size: large;\">\u00a0<\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><span style=\"font-size: large;\">The mixture should look similar to this when it is ready for the next step<\/span>.<\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1012_IMG_26701.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1012_IMG_2670.jpg\" width=\"640\" height=\"434\" border=\"0\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: center;\"><b><span style=\"font-size: large;\">Step 8:<\/span><\/b><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Press down on cooked cherries.\u00a0 Draining as much liquid as possible from the fruit.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">\u00a0<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Discard the cooked cherries and keep the liquid.<\/span><\/div>\n<p>&nbsp;<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1013_IMG_26721.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1013_IMG_2672.jpg\" width=\"640\" height=\"434\" border=\"0\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: center;\"><b><span style=\"font-size: large;\">Step 9:<\/span><\/b><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Combine the cherry mixture you had set aside earlier with the liquid you just gathered from above.\u00a0\u00a0 <\/span><span style=\"font-size: large;\">\u00a0<\/span><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Stir well to combine.<\/span><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Place a tea infuser filled with the cherry kernels into the pot.<\/span><\/div>\n<div style=\"text-align: center;\"><\/div>\n<p>&nbsp;<\/p>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1014_IMG_26741.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1014_IMG_2674.jpg\" width=\"640\" height=\"434\" border=\"0\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: center;\"><b><span style=\"font-size: large;\">Step 10:<\/span><\/b><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Place mixture on stove over medium heat.\u00a0 Bring to a boil, gradually increasing the heat to high.<\/span><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Boil rapidly, stirring every few minutes for 10 to 15 minutes.\u00a0 Monitor the heat closely as you stir; if the jam begins to stick, decrease the heat slightly.<\/span><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">Between stirrings.\u00a0 Use a stainless steel spoon to skim foam off of mixture.\u00a0<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">\u00a0<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">After 10 to 15 minutes of boiling&#8230;.remove the mixture from the heat.\u00a0 Let rest for a moment.\u00a0 During this time, scrape off foam.<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">\u00a0<\/span><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\"><i><span style=\"font-size: small;\">(Sorry no foam removal photos&#8230;.my husband was off to friends by this time and I didn&#8217;t have an extra hand.)<\/span><\/i><\/span><\/div>\n<div style=\"clear: both; text-align: center;\"><a style=\"margin-left: 1em; margin-right: 1em;\" href=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1015_IMG_26821.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/leapphotography.com\/blog\/wp-content\/uploads\/2012\/07\/Cherry+Jam_1015_IMG_2682.jpg\" width=\"640\" height=\"434\" border=\"0\" \/><\/a><\/div>\n<p>&nbsp;<\/p>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><\/div>\n<div style=\"text-align: center;\"><b><span style=\"font-size: large;\">Step 11:<\/span><\/b><\/div>\n<div style=\"text-align: center;\"><span style=\"font-size: large;\">While you are cooking the mixture from step 10&#8230;.I suggest you start working on cleaning and sanitizing of jars.\u00a0 I use the hot water bath method.\u00a0 It can take awhile for the water to become hot enough to sterilize the glass.<\/span><\/div>\n<div style=\"clear: both;
